Is it possible to make a delicious cookie without any fats? Happily, the answer is most certainly yes. This recipe uses fresh mandarin juice and finely chopped apple to create a juicy and fruity muesli cookie that is utterly irresistible. (If mandarins are not in season, try store bought pineapple juice.) A mix of raisins and sultanas complete the mix of fruity flavours.

Aside from the medley of fruits, the rest of the cookie is entirely made up of oats. This means Fat-Free Muesli Fruit Cookies are wonderfully healthy as well. Oats are renowned for their health properties, containing a long vitamin list: thiamine, iron, folate and vitamin E. Every 100 grams of oats contains 10 grams of fibre and 16 grams of protein. However, just because these cookies are fat free, does not mean they are devoid of calories (if only!). The whole batch makes 12 cookies, working out at 150 calories per cookie.
Fat-Free Muesli Fruit Cookies
Ingredients
- 225 grams of cooking oats
- 85 grams of brown sugar
- 225 grams of peeled and finely chopped apple
- 85 grams of raisins and sultanas, or any preferred dried fruit
- 100 ml of hot tea
- 225 grams of mandarin wedges, yielding approx 150ml juice
- 3 tablespoons of golden syrup
- 1 teaspoon of vanilla essence
Directions
- Place the oats and brown sugar in a large mixing bowl. Mix the dry ingredients together thoroughly. Use hands if necessary.
- Soak the dried fruit in the tea
- Place the mandarin wedges in a blender and chop into a mush. Then place the juicy pulp in a sieve and press to collect the juice.
- Place the mandarin juice in a small saucepan and gently bring to the boil. Add honey and simmer for approximately five minutes.
- Add mandarin juice, honey and vanilla essence to the dry ingredients. Add the chopped apple.
- Drain the dried fruit and add to the mixture.
- Mix all the ingredients thoroughly.
- Line a baking dish with some baking paper. Place an egg poaching ring on the baking dish. (The ring should have a width of approximately 8 centimeters.) Fill the ring up with cookie mixture, then gently remove the ring. Repeat this process over.
- Place in an oven pre-heated to 180 degree celsius and cook for 30 minutes, or until nicely browned.
- Leave the cookies to cool for a good half hour, until they have firmly set.
How to Make a Slice Version
To turn this recipe into a less fiddly slice version, simply spread out the oat mixture in the baking tray and pat it down to a thickness of 2 centimeters. Bake as above, or until nicely browned. Once it has cooled, cut it with a sharp knife into squares.
